Since I am a mid-century neon signage enthusiast, I’m always on the lookout for signage I haven’t seen before. So, one day I was trying to find a small gallery that a friend was showing in Austin that happened to be in a neighborhood rather than on a main road. I was a bit lost when I came across an industrial building with its signage for Long Horn Meats. I had to stop and get reference images. That star is really fun and the lettering quite beat up by the Texas heat. 
Cropping in closer for the composition, I put a little irony and humor into the piece. There are folks who would like to see us eat bugs and get rid of raising animals for food, but the fact is, there are so many ranchers and farmers that rely on that for their livelihood. I will say, Texas is not a state that will succumb to veganism. There is a lot of history in raising cattle and other animals, so Texans are what I would call “Gung Ho” for that industry, thus the name of the painting.
